Make the best recipe for homemade breakfast sausage patties

You're working hard to steer clear of sugars, and you don't eat processed food. You haven't even had ice cream all summer (even on National Ice Cream Day!) You're eating meat like a caveman and feeling great. But did you know that there is a sneaky ingredient lurking in the meat aisle? This Recipe for Homemade Breakfast Sausage Patties (or really any flavor…see variations) will allow you to enjoy sausage without this ingredient.

What is the Sneaky Ingredient in Storebought Sausage?

In short…it’s sugar. I browsed several brands of sausages (both fresh and smoked) yesterday and saw corn syrup, dextrose and evaporated cane juice - all forms of sugar not acceptable on Paleo, Whole30, Low Carb or Carnivore diets. Yes, many sausage recipes or formulations have some form of sugar in them. It's part of what makes us all like sausage in a different way than say a burger or meatball which are also ground meat based. That salty and sweet thing that our human tongues seem to crave is all there in that casing (or patty). What if I told you it was super easy to make your own sausage with healthy ingredients? Read on to find out how you can with no special equipment.

Tips for Making This Recipe for Homemade Breakfast Sausage Patties

  • First off, you won’t be making links, they will be patties so no special equipment needed.

  • You can also use the seasoned ground meat without shaping into patties anywhere you would use Breakfast Sausage, Italian Sausage or Chorizo with the variations.

  • If you have a Kitchen Aid and really like to DIY, you can grind your own meat. Use the grinder attachment and buy less expensive cuts of meat like chicken thighs, turkey legs or pork shoulder and grind it yourself. (I typically don’t do this but did at one time when I was having to eat very strictly for an elimination diet.)

  • Most likely, you’re going to buy already ground meat. That’s great and what I do. Organic ground turkey, chicken or pork will all work. (NOTE: f you are having to make budget concessions use the best quality you can afford but avoid anything that doesn't at least say "no antiobiotics EVER" on the packaging if you possibly can.)

  • For unrefined sugar choices, use maple syrup or sugar, coconut sugar, or even grated apples.

  • Use lean ground turkey or chicken breast to keep the calories low while getting the protein

  • Add finely chopped uncooked bacon to the mix to bump up the juicy factor.

Is Making homemade breakfast sausage Easy?

If you can make a burger patty, you can make homemade sausage patties. It’s basically the same method. Once you make your own sausage, I promise you will not want to go back to the store bought stuff.

Make up several batches at once and freeze them for later. Better yet, batch make the breakfast sausage recipe then divide the raw seasoned meat into how many flavors you want to create. These are the additional seasonings to make the other flavors.

  • Hot Breakfast Sausage - Red pepper flakes

  • Italian - Fennel seeds, oregano and red pepper flakes for spicy.

  • Chorizo - Smoked Paprika, Cumin and red pepper flakes for spicy along with an extra teaspoon of apple cider vinegar.

Step One

Gather ingredients for your desired sausage flavor. I am doing Italian today and I did fail to put the toasted fennel seeds in this photo, but you can see them in the top image.

Step Two

Mix everything together in a bowl.

Step Three

Using a scoop or your hands to form equal sized patties or simply saute and break apart like you would ground beef. (If making patties, it works better to chill for a bit but this isn't absolutely necessary.)

Step Four

Cook in bacon fat or avocado oil until brown and temp reaches 165 on the inside.

Ways to Use Homemade Sausage Patties

  • Crumble chorizo or breakfast sausage into scrambled eggs and make breakfast tacos

  • Combine cooked sausage crumbles with marinara sauce for a meaty and flavorful pasta sauce

  • Combine chorizo with home fries and make a Mexican style breakfast bowl with guacamole, salsa, shredded lettuce and regular or dairy free cheese

Recipe for Homemade Breakfast Sausage Patties

Ingredients

  • 1 lb ground turkey, chicken or pork (or a mixture of one or more)
  • 1 teaspoon coconut sugar or maple syrup (or 1 tablespoon grated apple)
  • 1 teaspoon sea salt (I used Himalayan pink)
  • 3 or more garlic cloves, minced
  • 1 tablespoon vinegar (sherry or apple cider)
  • 1 1/2 teaspoons dried thyme
  • 1 teaspoon dried sage
  • 1/2 teaspoon black pepper
Spicy Breakfast
  • Add 1/2 teaspoon or more of cayenne or crushed red pepper flakes
Sweet Italian
  • Use balsamic vinegar instead of Sherry
  • Add 2 teaspoons ' data-amount-secondary='3 g'>1 1/2 teaspoons each Italian herb blend and Greek oregano plus 2 teaspoons toasted fennel*
Spicy Italian
  • Same as Sweet Italian plus add 1 or more teaspoons red pepper flakes
Chorizo
  • Omit sage. Use 1 1/2 tablespoons apple cider vinegar and add 2 teaspoons cumin, 1 teaspoon ' data-amount-secondary='2 g'>1 teaspoon oregano plus 1 teaspoon regular and/or smoked paprika

Instructions

  1. Mix ground meat with all the seasonings and form into patties or stir-fry and break up to use for lasagna, casseroles, etc.
To make patties
  1. Use a large ice cream scoop to portion them out then shape into patties. One pound should make about 8 2-oz patties. If you have the time, let these chill for 2 or more hours (up to a day) to help them hold together better.
  2. Fry in bacon fat or avocado oil to keep it Paleo.

Notes

Toast fennel by placing in a hot dry skillet and watching them until they turn golden. Remove immediately.
