Maple Pecan Blondies | Grain Free, Vegan

Need some ooey-gooey, sweet and salty goodness in your life? What if I told you you can have all of that without compromising your lifestyle choices. These Maple Pecan Blondies are the ticket. They are grain free, vegan and refined sugar free and bonus they are paleo friendly.

A Little Note Prior…

Before I get to the recipe, let me apologize to my faithful readers for being very sporadic in posting for the last year. I just happened to glance at my blog list and realized that in the last year, I have posted exactly four times. This is not acceptable and while there isn’t a great excuse, I do want to explain what happened in one brief phrase: 2018 was a very traumatic year personally. That said, at the beginning of this year, I decided that 2019 would be my year of recovery and restoration to overcome the hijacking of what was supposed to be a monumental birthday year for me. (Let’s just say it was a decade birthday and leave it at that, Um-kay?)

So…as of March 1, I have decided to transition from having a location dependent business of being a health-driven private chef to establishing myself as healthy cooking coach and take my business primarily online. That means you will be seeing a lot more of me and on a much more regular basis.

What Makes These Maple Pecan Blondies Vegan and Paleo?

Not only are these blondies gluten free. They use almond butter and flax “eggs” in place of butter and eggs to make them vegan. The sweetener is maple syrup which is both vegan and paleo. So win-win-win! Want more Vegan and Paleo Maple Pecan goodness? Try these scones.

Ways to Serve Maple Pecan Blondies

Obviously straight out of the still-warm pan is one way, but you can also serve them other ways.

  • Top with bananas and coconut whipped cream (whip chilled coconut cream - either from the top of a can of coconut milk or this) for a decadent dessert

  • Include in your child’s (or your) bento lunch box for a sweet treat that won’t have them bouncing off the walls

  • Serve with coffee or tea

  • Serve as a not-too-sweet ender for brunch

Maple Pecan Blondies

Maple Pecan Blondies

Ingredients

  • 1 cup pecans
  • 1 flax egg (1 tbsp ground flax seeds mixed with 2.5 tbsp water)
  • or 1 egg
  • 1 cup almond butter
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 1/4 tsp sea salt
  • 1/4 tsp baking soda

Instructions

  1. Toast the pecans in a 350 degree oven until you can smell a toasty pecan fragrance. Set aside to cool.
  2. Make the flax egg and set aside to thicken (if using a real egg, simply mix it in with remaining ingredients.)
  3. Mix together egg (flax or real), almond butter, maple, vanilla, sea salt and baking soda.
  4. Fold in toasted pecans.
  5. Bake for 20 minutes.
  6. Let stand for at least 30 minutes before cutting into squares.
