How to Make the Easiest Instant Pot Buffalo Chicken Recipe You Can Use All Year

I’ve never been a “wing” person. They’re a lot of work. But I do LOOOOOVE buffalo sauce and I do love chicken. I’ve tried making buffalo chicken in many forms, but my very favorite way to make it is with this super easy Instant Pot Buffalo Chicken Recipe.

Ingredients for Instant Pot Buffalo Chicken Recipe

It’s two ingredients, thanks to my favorite storebought condiment brand Primal Kitchen Buffalo Sauce. There are three varieties, but my favorite is the Original. If you like spicier, there is a Hot version and Mild & Sweet for those who like milder.

Steps to Make Instant Pot Buffalo Chicken Recipe

The method is exactly the same as my 2 Ingredient BBQ Chicken. I use both versions in similar ways but love the Buffalo Chicken almost more because of the spice and super tangy nature of Buffalo Sauce.

  1. Add the chicken and bottle of Buffalo Sauce to Instant Pot (I like to fill the bottle 1/3 way with water and rinse the bottle into the Instant Pot, too to get all the sauce out.)

  2. Set timer to 9 minutes (15 for frozen chicken) and walk away

  3. When Instant Pot has released naturally, remove the lid and shred the chicken with two forks while it’s in the Instant Pot. Or use the stand mixer method without the sauce then stir the chicken back into the sauce.

Best Ways to Serve Instant Pot Buffalo Chicken for Dinner

Once the chicken is done, shred it up and combine well with the sauce. You will notice a theme here - everything I make with Buffalo Chicken begs for the crunch of celery and carrots and the creaminess of my Homemade Ranch Dressing (or blue cheese dressing if you’re a fan.)

  • Serve stuffed in baked potatoes. Sweet potatoes are especially good since they offset the tangy heat of the sauce. I serve with a simple slaw of shredded carrots, cabbage, thinly sliced celery and green onions tossed with Ranch. Feel free to use blue cheese dressing instead of ranch.

  • Bake spaghetti squash and scoop out the strands. Mix the buffalo chicken with the strands and stuff back into the shells. Top like potatoes above.

  • Rice bowl with cauliflower rice, regular rice or quinoa, blue cheese (optional), thinly sliced celery, shredded carrots, thinly sliced green onions and ranch dressing. You can also add bacon, avocado, and pickled onions.

  • Make Buffalo Chicken Tacos - serve on grain-free or jicama tortillas with avocado, tomato, finely shredded cabbage, blue cheese and ranch

Ways to Serve Instant Pot Buffalo Chicken as an Appetizer

  • Sweet Potato Nachos - sub Buffalo chicken for the salsa chicken and top like the stuffed potatoes above

  • Buffalo Chicken Dip - Combine the chicken with 1 container of soft cream cheese (I love Kite Hill Cream Cheese with Chives for dairy free) and 1/2 cup ranch dressing. Bake until bubbly and serve with celery, carrots, and your favorite potato or tortilla chips.

  • Buffalo Chicken Spirals - Combine the chicken with 1 container of soft cream cheese. Spread on gluten or grain free tortillas. Sprinkle with thinly sliced green onions, shredded carrots and pickled onions. Roll up tightly and slice into spirals.

The Sweet Potato Nachos and Spirals would also make awesome lunch options.

  1. Place chicken in bowl of Instant Pot. Pour barbecue sauce over the chicken. (Keep lid to bottle)
  2. Fill the bottle 1/3 with water. Replace lid and shake well.
  3. Pour water over the chicken and place Instant Pot lid securely on.
  4. Set manual timer to High pressure and 10 minutes.
  5. Let release naturally.
  6. Shred with two forks or stand mixer.
