I know Brussels Sprouts have had their extended moment on menus all over the country. I'm not a huge fan, however. That said, I buy them occasionally just for something different. I've discovered two ways I love them and no surprise, both of them involve bacon. These Crispy Roasted Brussel Sprouts made in the oven or airfryer is one. I will show you the other one in a future post that came about with the by-product of my Brussels Sprouts prep method.

The Secret to Crispy Roasted Brussel Sprouts

I’ve found that roasting whole or even cut Brussel Sprouts ends up with the outer leaves being crispy and no matter what, the insides are either under done squishy. This is part of why I don’t love them. I’ve found the only way to achieve the lightest, crispiest Brussels sprouts is to use the outer leaves. They crisp up like kale leaves when served hot and are just as addictive.

Since I can't philosophically throw out the parts of the brussels sprouts I don't want, I've developed a way to use the whole sprout without sacrificing the crispy texture. I will be posting my Shaved Brussel Sprouts Salad soon so stay tuned.

Prepping the Brussels Sprouts

It's a process to remove the leaves but if you like really crispy sprouts, it's worth it. (I have a video on this for members. Click here for a free trial)

  1. If you have a stalk of Brussel Sprouts, remove the sprouts from the stalk

  2. Remove all the individual outer leaves first by cutting the stem end and pulling off all leaves that are loose.

  3. For tiny sprouts - under 1/2”, halve these and use them, too.

Air Fryer Crispy Roasted Brussel Sprouts

  1. Coat the leaves and tiny halved sprouts well in avocado oil and Magic Salt.

  2. Use the Air Fry setting (which is typically 400 degrees) and cook until they are as crispy as you like them.

How to Make Crispy Roasted Brussel Sprouts in the Oven

  1. Preheat oven to 450 degrees

  2. Coat the leaves and tiny halved sprouts well in avocado oil and Magic Salt.

  3. Spread into a single layer on a large baking sheet with as little overlap as possible.

  4. Roast until the leaves start to turn a dark golden brown and the tiny sprout halves are looking brown and crispy on the edges.

How to Serve Crispy Roasted Brussel Sprouts

  • Serve immediately while they are hot and crispy.

  • They are perfectly delicious as is but toss them with hot cooked bacon and a few pickled shallots or onions to amp up the flavor.

  • Serve as a quick and unique app while you’re finishing up the entree for a dinner party.

Ingredients

  • Leaves and tiniest sprouts from 2 lbs of Brussel Sprouts
  • Avocado Oil Spray
  • Magic Salt

Instructions

Air Fryer Method
  1. Preheat Air Fryer (make sure it's at 400 degrees)
  2. Toss leaves and tiny sprout halves with avocado oil spray and 2-3 tsp Magic Salt.
  3. Set Air Fryer for 10 minutes then check and add more time if necessary.
  4. When leaves start to turn a dark golden brown and the tiny sprout halves are looking brown and crispy on the edges, remove and toss with bacon and pickled onions if desired.
  5. Serve immediately!
Oven Method
  1. Preheat oven to 450 degrees
  2. Toss leaves and tiny sprout halves with avocado oil spray and 2-3 tsp Magic Salt.
  3. Roast for 10-15 minutes or until leaves start to turn a dark golden brown and the tiny sprout halves are looking brown and crispy on the edges.
  4. Toss with bacon and pickled onions if desired.
  5. Serve immediately!
