Mediterranean Beef and Hummus Bowl | Paleo and Whole30 Hummus
What is it about Mediterranean food that is so addictive? Is the hot and cold elements, the spices, the copious amounts of fresh olive oil and lemon? I don’t know but I do know that this Mediterranean Beef and Hummus Bowl has it all.
Paleo and Whole30 Hummus?
If you are familiar with either of these “diets” you know that beans, or any legumes for that matter, are on the list of “no-no’s.” So how am I making a bean based recipe and still adhering to these principles?
Zucchini. That vegetable that is prolific at this point of the summer and is probably taking up space in your fridge now has a new place to star.
Make this up in batches when you are overrun with zucchini and freeze what you don’t eat right away. It is delicious and if you don’t announce it to your hummus-loving friends that it is not chickpea based, I promise they will never know.
Can I Make The Mediterranean Beef and Hummus Bowl Vegetarian or Vegan?
Of course! Turn it into a Buddha bowl by leaving out the beef altogether and instead top with roasted vegetables, feta and olives for vegetarian or roasted vegetables, olives and non-dairy yogurt (I LOVE Forager brand) flavored with dill and garlic for Vegan.
Can I Make This with Chicken Instead?
Sure. You can certainly use ground chicken in place of the beef and make the recipe just like it is or you can simply grill some juicy chicken breasts. If you want to amp it up a little, my Za’atar chicken would be great sliced and used in place of the beef .
Can I Use Other Vegetables as the Base for the Whole30 Hummus?
Many people use cauliflower, raw or roasted as the base, but I find it pretty strongly flavored leaving me feeling like this isn’t hummus but a tahini flavored cauliflower thing.
Zucchini on the other hand, is almost neutral in flavor with just a little bit of earthiness so it has the same characteristics as chickpeas in that way. You can use yellow squash, too since it is mildly flavored and the same texture as zucchini. Winter squash such as acorn or butternut, however, are simply too dense and too sweet to use in this recipe. You can throw a beet in if you want that fuschia glow and a little sweetness, but it will definitely need to be cooked first.
Can I Make This a Raw Meal?
You sure can. The hummus is raw, so you can simply exchange the beef for cauliflower rice mixed with lots of finely chopped green onion, parsley and cilantro (basically a grain-free tabbouleh) and then proceed with the vegetables on top as listed. Feel free to use untoasted sesame seeds and sprouted pumpkin seeds in place of the sesame seeds and slivered almonds.
Mediterranean Beef and Hummus Bowl
Zucchini Hummus Ingredients:
2 cup peeled and chopped zucchini (about 2 zucchini)
2/3 cup tahini
4 tbsp lemon juice
2 tsp minced garlic
2 tbsp extra virgin olive oil
1 tsp sea salt
2 tsp cumin
1/2 tsp paprika
Mediterranean Beef Ingredients:
1 lb ground beef
1 small yellow onion, finely chopped
2 garlic cloves, finely chopped
1 tsp sea salt
1/2 tsp black pepper
3/4 tsp granulated garlic
2 Persian cucumbers or 1 English cucumber, thinly sliced
1 pint cherry tomatoes, halved
1 cup shredded carrots
1 lemon, juiced
1/4 cup olive oil
Garnish (all optional but great if you have them): slivered almonds, sesame seeds, chopped cilantro, chopped green onion tops, kalamata olives
For the Hummus:
Process or blend until smooth. Taste and add more lemon juice or salt to you liking. If you like spicy, add a little cayenne.
For the Beef:
Brown the ground beef with the onion and garlic. Once browned, add a big drizzle of olive oil to crisp up the beef then add the spices and stir to distribute.
For the Vegetables:
Mix the vegetables with the lemon juice and olive oil. Season with sea salt.
Spread the zucchini hummus on the bottom of 4 bowls. Divide the beef and veggies amongst the bowls and top with the vegetables and any garnishes you are using.
