EDIBLE COOKIE DOUGH?

We probably all grew up eating cookie dough, right? But once I found out the way eggs are produced, I could no longer do it, until I found these cookies a couple of years ago. After I finished mixing up the dough and looking twice at the recipe to make sure I didn’t miss the step to add eggs, I realized there were none in the recipe. Suddenly I had all these ideas…cookie dough ice cream, cookie dough protein bars, etc. It took me almost two years to stop and develop a recipe that combines the salty sweetness of cookie dough with protein, but I finally did it.

WITH PROTEIN? WHAT???

My youngest son is a strapping 6’3” 16 year old that wants to go from his current 185 pounds to 200 pounds (wouldn’t it be nice to WANT to gain 15 pounds!) He, of course, eats the same diet as the rest of his high school baseball team, burgers, burritos and some form of fried chicken all the time with sub-par protein bars to fill in the gaps. (Most protein bars made for athletes have waaayyy too much protein and lots of yuck additives.)

I have wanted to find a way to get extra protein into his body but in a way that he would like it and at the proper quantity without additives. He is a sweetaholic and while I probably drive him nuts talking about it, I’m trying to help him understand that having occasional treats made with quality ingredients won’t hurt him, a steady diet of Mike n Ikes and energy drinks will. (I really have trained him about eating healthfully, but at this point in life I’m putting relationship over rules and letting him see how his diet affects his baseball game…he’s learning and we still love each other!)

These fit that bill plus give him quality protein and fats without any unpronouncable junk. The protein I used is straight up Vital Proteins Collagen and Almond Flour. These two combined provide about 5 grams of protein per ball. Two protein balls for him is a great snack of 10 grams of protein. Coconut OIl provides high quality fat containing MCTs.

Of course, he isn’t convinced that these are better than his chosen protein bar, but I will keep them around and when there are not protein bars around they will be ready. Oh, that reminds me…they are freezable so you can totally keep them around until you need them.

Edible Chocolate Chip Cookie Dough Protein Balls

Note: I sprinkle mine with flaky sea salt because I like that salty sweet flavor, but that is totally optional. Also, I found the Simply Balanced brand of chocolate chunks at Target. They are soy free and in tiny chunk form. I love them! Feel free to make this into micro-balls around 1/4” and stir into your favorite vanilla ice cream or nice cream.

1 cup blanched almond flour

1/4 cup tapioca flour

2 scoops Vital Proteins Collagen Peptides

1/4 tsp sea salt

1/4 cup maple syrup

3 Tbsp coconut oil, melted and cooled slightly

1 1/2 tsp vanilla extract

1/2 cup mini chocolate chunks

Flaky Sea Salt, optional

  1. Mix together the flours, collagen and salt

  2. Stir in the maple syrup, coconut oil and vanilla extract

  3. Fold in the chocolate chips

  4. Form into 1” balls and sprinkle with flaky sea salt. Store in fridge or freezer.
